Sopaipillas
- 1 packages ready to cook flour tortillas
- 1/2 cup sugar
- 3 tbsp ground cinnamon
- 2 cup oil
- Heat oil over medium heat in medium sized pot.
- (2 cup is a rough estimate I don't measure anything when I cook)*****eyeball it*****
- Cut up your tortillas into smaller portions.
- You can cut them as big or as little as you want.
- They don't have to be even either.
- I use all ten tortillas that come in the packet.
- Use as many as youd like.
- In a bowl mix sugar and cinnamon together set aside.
- Ready a plate lined with paper towels so you can drain the excess oil off the sopaipillas as you take them out.
- Grab a handful of tortillas and slowly drop one by one into the oil careful not to overlap.
- They will puff up very quickly.
- When the edges start getting golden brown take out and drop on your plate.
- They take about a minute maybe a minute and thirty seconds.
- They're real fast.
- Once on a plate sprinkle with sugar and cinnamon mixture.
- Repeat for remaining tortillas.
- When all are done you can place then in a container and cinnamon if you have any remaining mixture throw that on top.
- Place the lid on your container and shake gently to disperse mixture evenly.
- You can serve them with honey if you like.
- You'll be surprised how fast they'll disappear!
