Cocoa Snowballs

  1. Preheat oven to 325.
  2. Beat the eggs.
  3. Beat 1/2 cup of sugar into the eggs; set aside.
  4. In a sauce pan combine the rest of the sugar, cocoa, milk and butter and cook on low until the sugar is dissolved and the butter is melted.
  5. Remove from heat.
  6. Add vanilla and salt.
  7. Add egg mixture to the saucepan.
  8. In a bowl, combine the remaining dry ingredients.
  9. Slowly beat in the cocoa mixture.
  10. Pour into greased muffin tins, only 1/2 full.
  11. Bake for 20-25 minutes.
  12. Let coole completely then frost all sides and rool in coconut.
  13. Let stand at room temperature until frosten hardens.
