Cocoa Snowballs
- 3 eggs
- 1 12 cups sugar
- 12 cup cocoa powder
- 34 cup milk
- 14 cup butter
- 1 teaspoon vanilla
- 1 pinch salt
- 1 12 cups flour
- 12 teaspoon baking soda
- 2 (12 ounce) containers white frosting
- 2 34 cups flaked coconut
- Preheat oven to 325.
- Beat the eggs.
- Beat 1/2 cup of sugar into the eggs; set aside.
- In a sauce pan combine the rest of the sugar, cocoa, milk and butter and cook on low until the sugar is dissolved and the butter is melted.
- Remove from heat.
- Add vanilla and salt.
- Add egg mixture to the saucepan.
- In a bowl, combine the remaining dry ingredients.
- Slowly beat in the cocoa mixture.
- Pour into greased muffin tins, only 1/2 full.
- Bake for 20-25 minutes.
- Let coole completely then frost all sides and rool in coconut.
- Let stand at room temperature until frosten hardens.
