Open Face Reuben

  1. Heat olive oil over low heat.
  2. Separate onion slices into thin rings; add with garlic to hot pan.
  3. Saute until golden, turning over onion rings occasionally.
  4. Heat broiler or toaster oven.
  5. Place one slice of cheese atop each slice of bread; place into oven, cooking just until cheese bubbles.
  6. Remove from oven and spread 1 tsp.
  7. dressing on each half; top each side with onions, divided evenly.
  8. Serve 2 open-faced sandwiches to each person.
  9. Cook peas per package instructions; season as desired with salt-free seasoning.
  10. Divide into 4 equal servings.
  11. Complement meal with a nectarine per person.
  12. Serve each person an 8 fl oz glass of water with the meal.
