Open Face Reuben
- 1 Tbsp. extra virgin olive oil
- 2 medium red onions, thinly sliced
- 2 peeled garlic cloves, minced
- 8 slices KRAFT 2% Milk Swiss Cheese Slices
- 8 slices rye bread
- 8 tsp. KRAFT Lite Thousand Island Dressing
- 2 cups frozen peas
- 4 nectarines
- 32 fl oz (4 cups) drinking water
- Heat olive oil over low heat.
- Separate onion slices into thin rings; add with garlic to hot pan.
- Saute until golden, turning over onion rings occasionally.
- Heat broiler or toaster oven.
- Place one slice of cheese atop each slice of bread; place into oven, cooking just until cheese bubbles.
- Remove from oven and spread 1 tsp.
- dressing on each half; top each side with onions, divided evenly.
- Serve 2 open-faced sandwiches to each person.
- Cook peas per package instructions; season as desired with salt-free seasoning.
- Divide into 4 equal servings.
- Complement meal with a nectarine per person.
- Serve each person an 8 fl oz glass of water with the meal.
