Mocha Brownies

  1. FOR THE BROWNIES: In a medium saucepan combine granulated sugar, butter, cocoa powder, and coffee crystals.
  2. Cook and stir over medium heat till butter melts.
  3. Remove from heat; cool for 5 minutes.
  4. Add eggs and vanilla.
  5. Beat lightly by hand just till combined.
  6. Stir in the flour, baking powder, and salt.
  7. Stir in walnuts.
  8. Spread batter in a greased 9x9x2-inch baking pan.
  9. Bake in a preheated 350F oven for 25 minutes, or till set.
  10. Cool in pan on a rack.
  11. FOR THE FROSTING: In a mixing bowl beat butter till fluffy.
  12. Add cocoa powder.
  13. Gradually add 1 cup of the powdered sugar, beating well, Slowly beat in 2 tablespoons of the milk and vanilla.
  14. Slowly beat in remaining sugar.
  15. Beat in additional milk, if necessary, to make a frosting of spreading consistency.
  16. Spread frosting over cooled brownies.
  17. Cut into bars.
