Saffron Couscous with Fresh Peas and Chives

  1. Bring chicken broth to simmer in medium saucepan.
  2. Add peas and cook just until tender, about 2 minutes.
  3. Using slotted spoon, transfer peas to bowl.
  4. Add 2 tablespoons butter and saffron threads to broth and bring to boil.
  5. Remove from heat.
  6. Add couscous; stir to blend.
  7. Cover tightly and let stand until liquid is absorbed and couscous is tender, about 5 minutes.
  8. Fluff couscous with fork.
  9. Gently mix in chives and peas.
  10. Season to taste with salt and pepper.
  11. Transfer couscous to large bowl.
