Hawaiian Banana Chocolate Bread
- 1 cup whole wheat flour
- 1/2 cup flour, all-purpose
- 13 cup brown sugar packed
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon ground
- 1/2 cup walnuts chopped
- 1/2 cup chocolate chips (semi-sweet)
- 1 large eggs
- 1/4 cup canola oil
- 1/4 cup applesauce natural unsweetened
- 1 cup bananas mashed
- 4 ounces pineapple crushed, drained
- 1 teaspoons vanilla extract
- Preheat oven to 350F (180C).
- Combine whole wheat flour, all-purpose flour, brown sugar, baking soda, salt and cinnamon in a large bowl.
- Stir in walnuts and chocolate chips.
- Set aside.
- Mix together egg, oil, applesauce, bananas, pineapple and vanilla extract.
- Add to flour mixture, stirring just until batter is moistened and incorporated.
- Spoon batter into 1 well greased 9x5x3 inch loaf pan.
- Bake for about 1 hour or until a wooden stick inserted into center comes out clean.
- Cool 10 minutes in pan on wire rack.
- Remove from pan to wire rack and let cool completely.
- Slice into slices and serve.
- The bread can be frozen in a freezer safe zip-lock bag for up to 1 month.
