Fat-Free Devil'S Food Cake
- 5 egg whites
- 1 1/4 c. firmly packed brown sugar
- 3/4 c. buttermilk
- 2 c. all-purpose flour
- 1/3 c. unsweetened cocoa or unsweetened European-style cocoa powder
- 3/4 tsp. baking powder
- 3/4 tsp. baking soda
- 1 Tbsp. grated orange peel (optional)
- 1 tsp. vanilla extract
- confectioners sugar (for garnish)
- Preheat oven to 350u0b0.
- Coat 9-inch square baking pan with nonstick cooking spray; set aside.
- In large bowl with mixer at medium, beat egg whites, light brown sugar and buttermilk 2 minutes until blended.
- Add flour, cocoa powder, baking powder, baking soda, grated peel and vanilla extract.
- Beat 1 to 2 minutes until well blended.
- Pour into prepared pan; bake 25 to 30 minutes until pick inserted comes out clean.
- Cool 15 minutes in pan on wire rack.
- Remove cake from pan to wire rack and cool completely, about 30 minutes.
- Garnish.
- Serve with whipped cream, if desired.
