Shrimp Magnifico
- 2 cloves garlic, chopped finely or the equivalent in garlic powder
- 1/4 c. olive oil or vegetable oil and olive oil combined
- 1/4 c. butter
- 3 c. cooked, deveined shrimp
- 1/2 tsp. salt
- pepper
- 1 Tbsp. flour
- 1/2 c. dry white wine
- 1/2 tsp. dried oregano
- 1/2 c. grated Parmesan cheese
- 4 tsp. parsley
- 1/2 c. fresh bread crumbs
- hot rice
- In buttered skillet, heat shrimp and garlic.
- Add salt and pepper.
- Remove with a slotted spatula to a shallow baking dish. Mix flour with a little white wine and add to the butter in skillet, stirring until golden.
- Stir in oregano, rest of wine and olive oil, cooking until a little thickened.
- Pour over shrimp. Combine cheese, parsley and crumbs; sprinkle over shrimp.
- Bake at 350u0b0 for 30 minutes or until lightly browned.
- Serve over rice. Serves 4.
