Broiled Halibut With Mustard Sauce Recipe

  1. Cut each fish steak in half crosswise; throw away bone.
  2. Place in large, shallow non-metal dish; set aside.
  3. Combine next 6 ingredients; pour over fish, turning to coat.
  4. Cover; marinate in refrigerator for 1 hour, turning once.
  5. Remove fish from marinade; reserve marinade.
  6. Place fish on rack, coated with cooking spray; place rack in a shallow roasting pan.
  7. Brush with 1/4 teaspoon extra virgin olive oil; broil 4" from heat source, 5 min.
  8. Turn fish, and brush with 1/4 teaspoon extra virgin olive oil.
  9. Broil an additional 3 minutesuntil fish flakes easily.
  10. Arrange on serving platter; keep hot.
  11. Combine reserved marinade, remaining 2 1/2 teaspoon extra virgin olive oil and mustard in saucepan.
  12. Place over Medium heat; cook till smooth, stirring with a wire whisk.
  13. Add in onion, parsley and capers; reduce heat; simmer, uncovered, 2 min, stirring occasionally.
  14. Spoon sauce over fish.
  15. Yield; 6 servings.
