Thai Chilli Pickle Dip

  1. Heat a little oil in a saucepan and cook onion and garlic for 5 minutes or until onion is soft.
  2. Stir in chilli, ginger, lemon grass, lime leaf and coriander and cook a further 10 minutes.
  3. Add lime juice, Philly*, coconut milk and tomato and chilli pickle.
  4. Stir over a low heat until smooth.
