Italian Lasagne(Makes 8 To 10 Servings)
- 1 lb. sweet Italian sausage
- 1 lb. ground beef
- 1 clove garlic, minced
- 1 Tbsp. dried basil
- 1 tsp. salt
- 1 (1 lb.) can tomatoes
- 2 (6 oz.) cans tomato paste
- 1/2 c. dry red wine (optional)
- 8 oz. lasagne noodles
- 2 eggs
- 3 c. Ricotta cheese or cottage cheese
- 1/2 c. grated Parmesan cheese
- 2 Tbsp. parsley flakes
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 lb. Mozzarella cheese, thinly sliced
- Brown sausage and meat; drain off fat.
- Add garlic, basil, salt (1 teaspoon), tomatoes, tomato paste and wine.
- Simmer, uncovered, about 30 minutes, stirring often.
- Cook lasagne noodles; drain.
- Beat eggs; add Ricotta or cottage cheese, Parmesan cheese, parsley, salt (1 teaspoon) and pepper.
- Blend well.
- Layer 1/2 noodles in buttered 9 x 13-inch pan.
- Spread with 1/2 cheese mixture; add 1/2 Mozzarella and 1/2 meat sauce. Repeat.
- Bake at 375u0b0 for 30 minutes until bubbly.
- This freezes beautifully.
