Bananas Foster

  1. Melt butter in skillet over medium heat; add sugar.
  2. Cook until bubbly, stirring constantly.
  3. Peel bananas; slice crosswise, then quarter each piece lengthwise.
  4. Quarter each pineapple slice. Stir bananas, pineapple and cinnamon into brown sugar sauce. Cook over medium heat until bananas are slightly soft; baste constantly with sauce.
  5. Add liqueur; stir gently.
  6. Place rum in small, long-handled pan and heat until just warm.
  7. Ignite and pour over fruit.
  8. Serve immediately over ice cream.
  9. Yield:
  10. 6 to 8 servings.
