Bananas Foster
- 1/2 c. butter
- 1/2 c. firmly packed brown sugar
- 3 large firm bananas
- 1 (8 1/4 oz.) can sliced pineapple, drained
- 1/4 tsp. ground cinnamon
- 2 Tbsp. banana flavored liqueur
- 1/4 c. light rum
- vanilla ice cream
- Melt butter in skillet over medium heat; add sugar.
- Cook until bubbly, stirring constantly.
- Peel bananas; slice crosswise, then quarter each piece lengthwise.
- Quarter each pineapple slice. Stir bananas, pineapple and cinnamon into brown sugar sauce. Cook over medium heat until bananas are slightly soft; baste constantly with sauce.
- Add liqueur; stir gently.
- Place rum in small, long-handled pan and heat until just warm.
- Ignite and pour over fruit.
- Serve immediately over ice cream.
- Yield:
- 6 to 8 servings.
