Spiced Courgette Fruit & Nut Loaf
- 500 g caster sugar
- 250 ml corn oil
- 3 eggs
- 5 tablespoons milk
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 500 g courgettes, grated
- 750 g self raising flour
- 12 teaspoon bicarbonate of soda
- 1 teaspoon ground ginger
- 12 teaspoon ground cloves
- 200 g pecan nuts, chopped
- 140 g raisins
- Heat the oven to 160c/gas3.
- grease 2x1lb loaf tins & line the base of each with baing parchment.In a large bowl , mix the sugar oil & eggs, milk & vanilla, then the courgettes.
- Fold in the dry ingredients, followed by the nuts & raisins.
- Spoon the mix into the tins, level the tops.
- Bake for 1 hour 30 minutes until golden & well risen with a crisp crust.Leave to cool slightly.Turning out on a wire rack to cool.
- Serve warm & eat within 2 days.
