Barbecue Burger on Texas Toast
- 48 slices plum tomatoes, cut into 1/2-thick slices
- 16 each fresh ears corn on the cob, husks and silk removed
- 16 each ground beef patties (5 oz.) King Sooper's 1 lb For $3.99 thru 02/09
- 2 cups OPEN PIT Hickory Smoke Barbecue Sauce
- 32 slices Texas toast white sandwich bread, toasted
- 16 each banana peppers, stems removed, cut in half, seeded and grilled
- 32 each jalapeno jack cheese slices (1 oz.)
- 2 cups iceberg lettuce, shredded
- Place tomatoes in single layer on bottom of parchment-lined sheet pan.
- Bake in 400 degrees F convection oven 20 min.
- or until lightly charred.
- Meanwhile, grill corn on high heat 12 min.
- or until tender and lightly charred on all sides, turning occasionally.
- For each serving: Grill 1 ground beef patty to medium (160 degrees F), or desired doneness.
- Brush with 2 Tbsp.
- barbecue sauce.
- Place on 1 toast slice; top with 3 roasted tomato slices, 1 pepper, 2 cheese slices and 2 Tbsp.
- lettuce.
- Cover with second toast slice.
- Serve with 1 ear of grilled corn.
