Prawns Primavera
- 20 prawns, split
- 2 oz. julienne zucchini
- 2 oz. sliced mushrooms
- 2 oz. julienne carrots
- 2 oz. broccoli florets
- 2 oz. small green beans
- 4 oz. tomatoes, chopped, peeled and seeded
- other seasonal fresh vegetables as desired
- pasta for 4 people
- 4 oz. olive oil
- 2 oz. butter
- 1 Tbsp. fresh basil
- 1 Tbsp. diced onion
- 1 tsp. diced garlic
- pinch of white pepper/salt
- 1 tsp. chopped parsley
- 8 oz. Parmesan
- Blanch the vegetables until just firm.
- Saute the onions, garlic, basil and parsley in the oil.
- Add the vegetables and prawns, tossing lightly until well heated.
- Add the rest of the ingredients, holding back half of the cheese.
- Add the heated pasta and mix completely.
- Serve on heated plates and sprinkle the remaining cheese over the top.
