Irish Delight: Rabbit And Cider Stew

  1. Preheat the oven to 275F.
  2. Heat a skillet over medium heat and add the olive oil.
  3. Stir in the bacon and cook until golden and crisp.
  4. Transfer the bacon to a casserole dish.
  5. Add the rabbit joints to the skillet and cook until golden all over, then place in the casserole dish.
  6. Lastly, add the carrots, shallots, garlic and honey to the skillet and cook until caramelized.
  7. Transfer to the casserole dish, season with salt and black pepper, and stir in the thyme and bay leaf.
  8. Pour over the cider.
  9. Cover and cook in the oven for 2 hours.
  10. Serve.
