Farmstand Raw Vegetable Salad

  1. In a large bowl, combine the peas, cucumbers, corn, and beets.
  2. Squeeze the lemon juice over the vegetables, and drizzle with the oil.
  3. Season with salt and pepper.
  4. Toss to combine, and serve at room temperature.
