Fiasco
- 2 pkg. Doritos chips (plain or flavored), crumbled
- 2 lb. ground beef
- 1 (46 oz.) can tomato juice
- 1 1/2 pkg. chili mix
- 1 (5 oz.) can whole corn
- 2 1/2 c. cooked Minute rice
- 1 can cheese soup
- 1 1/2 lb. Velveeta
- 3/4 can tomatoes and green chiles (small can)
- toppings: cheese, diced onion, shredded lettuce, diced tomato, diced green pepper, sliced black olives, etc.
- Brown ground beef and drain.
- Add tomato juice and chili mix; simmer for 30 minutes.
- Add corn and rice.
- This mixture is served over the chips on a plate, so it shouldn't be too runny.
- You don't want it as thick as refried beans, either.
- Adjust by cooking down a bit or adding a little water.
- Heat cheese soup in saucepan and add Velveeta and tomatoes and green chiles; heat slowly.
- Top meat mixture with cheese mixture.
- In any order you wish, top meat mixture with any topping you would like on Mexican food.
