Stuffed Mushrooms
- 8 oz. fresh mushrooms
- 3 slices bacon, chopped
- 3/4 c. finely chopped green onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 to 4 drops red pepper sauce
- 1 Tbsp. all-purpose flour
- 1/4 c. whipping cream
- 2 Tbsp. shredded Cheddar cheese
- Wash mushrooms, remove stems and chop fine.
- Microwave mushroom caps at Medium for 1 minute.
- Microwave bacon at High until crisp (2 1/2 to 3 minutes).
- Drain.
- Add mushroom stems, onions, salt, pepper and red pepper sauce.
- Microwave on High for 2 to 3 1/2 minutes.
- Blend in flour.
- Stir in cream until smooth.
- Microwave until thickened and smooth.
- Fill each mushroom cap with bacon mixture and cheese.
- Bake 10 to 12 minutes, until cheese melts. Makes about 12 appetizers.
