Linzer Muffins
- 1/4 c. melted butter
- 1 c. milk
- 1 large egg
- 1/4 tsp. almond extract
- 2 c. all-purpose flour
- 1/3 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- raspberry jam
- confectioners sugar
- Preheat oven to 400u0b0.
- Grease twelve 2 1/2-inch muffin pan cups.
- Whisk together melted butter, milk, egg and almond extract. Combine flour, sugar, baking powder, salt and cinnamon in separate bowl.
- Stir wet ingredients into dry ingredients.
- Spoon batter evenly into muffin cups, filling each about three-quarters full.
- After filling cups, insert 1/2 teaspoon raspberry jam into each.
- Bake 20 to 22 minutes, until toothpick inserted in center of muffin comes out clean.
- After baking, sift on 1 tablespoon confectioners sugar.
