Cherry Marmalade Muffins
- 2 cups self rising flour
- 1 teaspoon pumpkin pie spice
- 12 cup sugar
- 12 cup glace cherries, quartered
- 2 tablespoons orange marmalade
- 23 cup milk
- 4 tablespoons margarine
- marmalade to glaze
- Preheat oven to 400.
- Lightly grease 12 muffin cups with oil.
- Sift together the flour and spice, then stir in the sugar and glace cherries.
- Mix the marmalade with the milk and beat into the dry ingredients with the margarine.
- Spoon into the greased cups.
- Bake 20-25 minutes, until golden brown and firm.
- Turn out onto a wire rack and brush to tops with warmed marmalade.
- Serve hot.
