Microwave Southwest Chili
- 1 Tbsp. vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 lb. ground beef
- 1 (28 oz.) can stewed tomatoes
- 1 (6 oz.) can tomato paste
- 1 (7 oz.) can green chilies
- 2 (16 oz.) cans black beans, drained
- 1 Tbsp. chili powder
- 3/4 tsp. ground cumin
- 1/2 tsp. ground cinnamon
- 1/2 oz. unsweetened chocolate
- In 3-quart microwave casserole, combine onion, garlic and oil. Heat on High 4 minutes; stir once.
- Add beef; cook on High 4 minutes.
- Stir to break up lumps.
- Cook 4 minutes.
- Drain fat. Stir in remaining ingredients, mixing well.
- Cook uncovered on High 5 minutes.
- Stir; cook 15 minutes longer.
