Polynesian Chicken

  1. Heat oven to 375u0b0.
  2. Melt butter in 13 x 9 x 2-inch baking pan. Roll chicken in mixture of the flour, salt and pepper; then place in pan and bake for 30 minutes.
  3. Turn chicken pieces; top with peppers, onions, olives and pineapple chunks.
  4. Rinse shrimp in cold water; add to chicken.
  5. Combine tomato soup and pineapple juice (or water) and pour over chicken.
  6. Cover pan with foil and bake 30 minutes more.
  7. Serve over rice.
  8. Serves 6.
