Polynesian Chicken
- 1/4 c. butter or margarine
- 1 lb. boneless chicken breasts
- 1/2 c. flour
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 small green pepper, sliced
- 1 small onion, sliced thin
- 1/3 c. stuffed olives, sliced
- 1 large can pineapple chunks, drain, reserve juice
- 7 oz. frozen shrimp
- 1 can tomato soup
- 1/4 c. pineapple juice
- Heat oven to 375u0b0.
- Melt butter in 13 x 9 x 2-inch baking pan. Roll chicken in mixture of the flour, salt and pepper; then place in pan and bake for 30 minutes.
- Turn chicken pieces; top with peppers, onions, olives and pineapple chunks.
- Rinse shrimp in cold water; add to chicken.
- Combine tomato soup and pineapple juice (or water) and pour over chicken.
- Cover pan with foil and bake 30 minutes more.
- Serve over rice.
- Serves 6.
