Crustless Crab Quiche Recipe
- 6 to 8 ounce. Alaska Snow Crab (frzn or possibly canned); reserve liquid
- 4 slices bacon
- 3 Large eggs
- 1/2 c. biscuit mix
- 1/3 c. melted butter
- 1 1/2 c. lowfat milk
- 1/8 teaspoon salt
- Dash of pepper
- 2 c. shredded Swiss cheese
- Parsley for garnish
- Thaw crab if frzn, drain, reserving liquid.
- Slice crab meat, reserving whole leg piece for garnish.
- Fry bacon till crisp.
- Drain and crumble.
- Beat together Large eggs, biscuit mix, butter, lowfat milk, crab liquid, salt and pepper till smooth.
- Pour into 9 inch pie plate.
- Sprinkle crab, cheese and bacon over top and press down gently.
- Bake for 35 to 40 min at 350 degrees.
- Garnish with parsley and reserved leg meat.
- Cut into wedges and serve.
- Makes 6 to 8 servings.
