Rasta Charlie's Caribbean Coconut Rice
- 1/2 onion, diced
- 1 garlic cloves, minced
- 2 tsp Fresh ginger, minced
- 1 tsp Coconut oil
- 1 1/2 cup parboiled rice
- 1 can Coconut milk (400ml)
- In a pot, heat coconut oil and add onion and garlic.
- Once the onion is translucent, add the ginger and rice.
- Mix together to infuse the rice.
- Add the coconut milk and stir, then add a can of water (using the coconut milk tin)
- Mix and bring to boil, reduce heat to medium low, place lid on pot and cook 12 min.
- *stirring occasionally*
- Stir after 12 min, then leave the lid slightly off the pot and turn to low heat and cook another 12 min.
