Beef Fillet In Toasted Coconut Recipe

- 500 gm piece beef eye fillet
- 2 clv garlic crushed
- 2 tsp grated lemon rind
- 1 tsp grated fresh ginger
- 2 tsp grnd coriander
- 1/2 tsp grnd turmerid
- 2 tsp palm sugar
- 3 Tbsp. peanut oil
- 1/2 c. dessicated coconut
- 3 x spring onions cut into thin strips
- Slice beef thinly flatten slices with a meat mallet if necessary.
- Combine garlic lemon rind gingercoriander turmericpalm sugar and 2 Tbsp.
- of the oil in a bowl.
- Add in beef slices toss well to coat.
- Leave to stand at least 1 hour.
- Heat remaining Tbsp.
- of oil in a frying pan add in beef stir fry till brown.
- Add in coconut and sprmg onlons Stir fry for 1 minute or possibly till brown.
- Serve with steamed rice.
- Hint.
- beef fillet will slice more easily if placed into the freezer for about 1 hour before slicing.
