Fried Zucchini Blossoms

  1. Mix together flour, curry powder, and salt.
  2. Add club soda; mix until smooth.
  3. Let batter stand 10 minutes.
  4. In a small bowl toss mozzarella and cilantro.
  5. Stuff 1 tbsp.
  6. into each blossom, pressing ends of blossom closed.
  7. Heat 1 inch of oil in skillet to 375F.
  8. Dip the filled blossoms one at a time in batter.
  9. Coat completely.
  10. Fry, turning once, until golden and crisp.
  11. Drain on paper towels; sprinkle with salt.
  12. Serve warm.
