Fried Zucchini Blossoms
- 1 cup all-purpose flour
- 1 tsp. curry powder
- 1/4 tsp. salt
- 1 cup chilled club soda
- 1/4 lb. mozzarella cheese, coarsely grated
- 1 tbsp. finely chopped fresh cilantro
- 16 zucchini blossoms, pistils removed if desired
- Canola oil for deep-frying
- Mix together flour, curry powder, and salt.
- Add club soda; mix until smooth.
- Let batter stand 10 minutes.
- In a small bowl toss mozzarella and cilantro.
- Stuff 1 tbsp.
- into each blossom, pressing ends of blossom closed.
- Heat 1 inch of oil in skillet to 375F.
- Dip the filled blossoms one at a time in batter.
- Coat completely.
- Fry, turning once, until golden and crisp.
- Drain on paper towels; sprinkle with salt.
- Serve warm.
