Curried Shrimp
- 3 lb. medium shrimp
- 9 c. water
- 1/4 c. butter
- 1 1/2 tsp. curry powder
- 1/4 c. chopped fresh parsley
- 1/2 c. chopped green bell pepper
- 1/2 c. chopped celery
- 5 Tbsp. flour
- 1/2 tsp. garlic salt
- 3/4 tsp. salt
- 3 c. milk
- 1 1/2 c. shredded Cheddar cheese
- 1/4 c. chopped pimento
- Drop shrimp into boiling water in saucepan.
- Return to a boil; reduce heat.
- Simmer for 3 to 5 minutes or until done to taste; drain and rinse with cold water.
- Chill in refrigerator.
- Peel and devein shrimp.
- Melt butter in heavy saucepan over medium heat. Stir in curry powder, parsley, green pepper and celery.
- Cook for 2 minutes, stirring occasionally.
- Add flour, garlic salt and salt; mix well.
- Cook for 1 minute, stirring constantly; reduce heat.
- Stir in milk gradually.
- Cook until thickened, stirring constantly.
- Stir in cheese until melted.
- Add shrimp and pimento. Heat to serving temperature, stirring constantly.
- Yield:
- 10 servings.
