Black Bean and Butternut Burritos

  1. In a large skillet or saucepan, heat oil.
  2. Saute onions until tender.
  3. Add butternut.
  4. Cover and cook over medium heat until tender.
  5. Add cumin, cinnamon, and salt.
  6. Add beans.
  7. Cover, and heat through.
  8. Put ⅛ of mixture in each tortilla, top with 3 Tbsp.
  9. cheese, and roll up.
  10. Place seam-side down in a greased 9 x 13 baking pan.
  11. Bake uncovered in 350 degrees F oven for about 15-20 minutes, until heated through.
  12. Serve with sour cream and salsa, and cilantro if you wish.
