Sloppy Joe's on Cornbread
- 1 lb ground beef
- 34 cup chopped onion
- 12 cup chopped sweet pepper
- 12 cup chopped celery
- 1 grated carrot (about 3/4 cup)
- 2 12 cups canned whole tomatoes, undrained (about one and one-quarter 16oz-ounce cans)
- 16 ounces tomato puree
- 1 teaspoon black pepper
- 34 teaspoon salt
- Brown ground beef in big iron skillet, about 4 minutes.
- Stir in onion, green pepper and celery and fry until brown, about 8 minutes.
- Add carrot, tomatoes and tomato puree.
- Stir mixture well and season with pepper and salt.
- Simmer 45 minutes.
- Serve over hot buttered corn bread.
