Sunshine Salad
- 6 cups dark leafy greens
- 2 cups mandarin oranges or 2 cups oranges, pieces
- 1 cup pineapple tidbits or 1 cup pineapple chunk
- 1 cup shredded carrot
- 1 cup sliced cantaloupe
- 1 cup low-fat plain yogurt
- 1 tablespoon ranch dressing
- Place cleaned greens in salad bowl.
- Add fruits and vegetables.
- Mix dressing and pour over salad.
- Eat right away or chilled.
- Variations: Add other vegetables and fruits that are bright and colorful.
- Any other dressing may be used.
