Banana Coconut Delight Bananasfrom Jamaica Recipe

• 2 x ripe bananas
• 2 Tbsp. brown sugar
• 1 tsp ginger
• 1 tsp cinnamon
• 1 Tbsp. lime juice
• 1 c. coconut grated
• 1 pkt lime flavored gelatin
• 1 x orange

1. Prepare the gelatine and pour into a shallow pie dish; leave to partially set.
2. Slice bananas and arrange over gelatine, sprinkle lime juice over them.
3. Mix together sugar, ginger and cinnamon, sprinkle over banana.
4. Peel brown skin of coconut and grate; spread proportionately over banana.
5. Decorate with orange segments.
6. Chill.
