Burmese Style Coconut Spiced Fruit Rice Recipe

  1. Combine oil, onion and 2 Tbsp.
  2. water in large non-stick skillet.
  3. Cook over high heat, stirring occasionally, till water evaporates and onion begins to brown.
  4. Add in remaining water and all remaining ingredients; lower heat.
  5. Cover and cook till heated through.
  6. Remove bay leaves before serving.
