Taco Salad
- 1 pkg. taco seasoning (French's)
- 1 1/4 lb. ground chuck or round
- 3/4 lb. Cheddar cheese, shredded
- 1 can large black olives, sliced
- 2 medium heads lettuce, shredded
- 2 red onions, chopped
- 1 basket cherry tomatoes, sliced in half or 3 tomatoes, cut up
- 1 pkg. nacho cheese tortilla chips
- 2 cans 3 bean salad (Green Giant) or can kidney beans (red)
- 1 bottle Catalina dressing
- 1 tsp. curry powder
- 1 tsp. paprika
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/4 c. finely minced smoked salmon or turkey
- 1/4 c. seeded chopped cucumber
- pinch of fresh dill
- 1 peach, chopped
- 1 Tbsp. maple syrup
- pinch of freshly grated nutmeg
- 2 Tbsp. prepared horseradish
- 1 Tbsp. minced fresh chives
- 1/4 c. finely minced red onion
- 1 c. tomato puree
- 1 tsp. dill weed
- Serve with cold poached salmon or other fish.
