Baked Fennel with Parmesan Shavings
- 2 bulb fennel
- 2 tbsp. olive oil
- 1/2 tsp. grated lemon zest
- 1 tbsp. fresh lemon juice
- 13 c. grated Parmesan cheese
- 1/4 c. Parmesan cheese shavings
- Preheat oven to 375 degrees F.
- Cut off and discard fennel stalks and fronds.
- Slice bulbs lengthwise 1/4 inch thick.
- In large bowl, toss fennel with oil until coated.
- Add lemon zest and juice and toss again.
- Spread fennel in 9- x 13-inch glass baking dish and sprinkle the grated Parmesan.
- Bake about 30 minutes, or until tender.
- Arrange the Parmesan shavings over top and serve.
