Baked Fennel with Parmesan Shavings

  1. Preheat oven to 375 degrees F.
  2. Cut off and discard fennel stalks and fronds.
  3. Slice bulbs lengthwise 1/4 inch thick.
  4. In large bowl, toss fennel with oil until coated.
  5. Add lemon zest and juice and toss again.
  6. Spread fennel in 9- x 13-inch glass baking dish and sprinkle the grated Parmesan.
  7. Bake about 30 minutes, or until tender.
  8. Arrange the Parmesan shavings over top and serve.
