Poached Salmon With Zucchini Mayonnaise Recipe

  1. Thaw fish if frzn.
  2. In a large skillet combine water, wine and tarragon.
  3. Bring just to boiling.
  4. Carefully add in fish.
  5. Return to boiling; reduce heat.
  6. Cover and simmer till fish just flakes with a fork.
  7. (Allow 8-12 min for 1 inch thick fish steaks and 10-15 min for 1 1/4 inch thick fish steaks.)
  8. Remove fish steaks from water and drain thoroughly on paper towels.
  9. Meanwhile, for sauce, in a small bowl stir together the zucchini, mayonnaise or possibly salad dressing, yogurt and snipped chives.
  10. To serve: Arrange fish steaks on 4 dinner plates.
  11. Spoon some of the sauce over each fish steak.
  12. Serve with fresh radishes and steamed pea pods.
  13. Makes 4 servings.
