Spinach Spoon Bread(Side Dish)
- 1 (10 oz.) pkg. frozen chopped spinach, cooked and drained
- 2 Tbsp. margarine
- 2 Tbsp. flour
- 1/8 tsp. pepper
- 1/4 tsp. salt
- 1/4 tsp. paprika
- 1 c. milk
- 1 (8 oz.) can whole pearl onions, drained
- 1 c. sour cream
- 2 eggs
- 1/2 c. margarine, melted
- 1 (8 1/2 oz.) pkg. corn muffin mix
- Preheat oven to 350u0b0.
- After spinach is cooked and drained, melt two tablespoons margarine in a small saucepan.
- Add flour, stirring constantly.
- Add spices.
- Slowly pour in milk, stirring until sauce thickens to a medium white sauce.
- Mix white sauce, spinach, onions, sour cream, eggs and melted margarine in a large bowl.
- Stir in muffin mix.
- Pour into greased 1 1/2-quart glass casserole dish.
- Bake, uncovered, for about an hour, until a toothpick inserted in the center of dish comes out clean.
- Serve immediately.
