Venison Chili
- 2 lb. ground venison
- 1/2 lb. ground pork
- 4 oz. butter
- 2 lb. medium onions, chopped
- 1 (6 oz.) can sliced mushrooms
- 4 oz. steak sauce
- 2 oz. Worcestershire sauce
- 1 Tbsp. garlic, crushed
- 1 Tbsp. meat tenderizer
- 1 (10 oz.) can beef consomme
- 1 (6 oz.) can tomato sauce
- 1 (16 oz.) can crushed tomatoes
- 1 (12 oz.) jar picante sauce
- 1 Tbsp. oregano
- 1 Tbsp. cumin
- 1 Tbsp. ground pepper
- 1 Tbsp. cayenne pepper sauce
- 2 Tbsp. Cajun spice
- 2 Tbsp. chili sauce
- 1 (19 oz.) can kidney beans
- Place first 9 ingredients in large skillet and cook until meat is brown and tender.
- Remove from skillet and place in 2-gallon pot.
- Add next 10 ingredients and cook for 45 minutes at low heat, stirring every 10 minutes.
- Add kidney beans and simmer for 15 minutes, stirring every 5 minutes.
- Serves 6.
- Preparation Time: 2 hours and 30 minutes.
