Carrot Cookies With Orange Icing
- 1 cup shortening
- 34 cup sugar
- 1 egg
- 1 cup carrot (cooked and mashed)
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons orange juice
- zest of one orange
- 1 tablespoon soft butter
- 1 14 cups icing sugar
- Beat shortening, add sugar, beat until light.
- Add egg, carrots and vanilla, beat.
- Add mixed dry ngredients.
- Drop by tablespoons on a cookie sheet ( I always use parchment on the sheet),.
- Bake a short 20 mins at 350 as they could dry out.
- Cool.
- Icing.
- Mix orange juice, zest and butter.
- Cream in icing sugar.
- Put in a fruit dish,
- Swirl the cookie upside down in the icing, set on a rack to dry.
- Store in a sealed container.
