Mexican Onion & Chile Pie

  1. Heat oven to 350F.
  2. Melt butter in 10-inch skillet until sizzling; add onion.
  3. Cook over medium-high heat, stirring constantly, 2 minutes.
  4. Remove from heat; stir in flour.
  5. Spray 9-inch glass pie pan with no-stick cooking spray.
  6. Slit chiles lengthwise; remove seeds, if necessary.
  7. Arrange chiles over bottom and up sides of pie pan; sprinkle with cheese.
  8. Beat eggs slightly in bowl; stir in milk, garlic salt and red pepper until well mixed.
  9. Stir in onion mixture; pour over cheese.
  10. Bake 25-30 minutes or until eggs are set and top is golden brown.
  11. Top with salsa, if desired.
