Pulled Pork Quesadillas

  1. Coleslaw: Combine ingredients.
  2. Refrigerate until ready to serve.
  3. Pulled Pork: Cook ingredients in saucepan on medium heat until heated through.
  4. For each serving: Top 1 tortilla with 1 cheese slice, 2-3/4 oz.
  5. (80 g) Pulled Pork and 2 oz.
  6. (60 g) Coleslaw; cover with second cheese slice and second tortilla.
  7. Cook on a griddle on medium-high heat 2 min.
  8. on each side or until cheese is melted and quesadilla is golden brown on both sides.
  9. Cut into wedges to serve.
