Pork Au Onion(Serves 6 To 8)
- 2 lb. boneless pork loin roast
- 1/2 c. light soy sauce
- 1/2 c. red wine vinegar
- 1/2 c. dry red wine
- 2 large onions
- 2 to 3 Tbsp. hot Chinese mustard
- 2 Tbsp. butter or margarine
- salt and pepper to taste
- Put boneless pork into a baking dish. Cover roast with the vinegar and soy sauce.
- Add enough water to cover roast.
- Bake with cover for 1 hour at 350u0b0.
- Saute onions in butter until well cooked while roast is baking.
- After 1 hour, remove baking dish from the oven.
- Drain the pork and remove any excess fat from the roast.
- Slice pork roast and return to baking dish.
- Cover with onions, red wine and mustard.
- Bake, uncovered, about 1/2 hour or until sauce is thick.
- Garnish with red and green peppers or other colorful vegetables.
