Chili Bean Cake
- 2 tablespoons olive oil
- 3 ounces brown breadcrumbs
- 6 scallions, finely chopped
- 1 tablespoon oil
- 1 orange bell pepper, chopped
- 1 green chili pepper, finely chopped
- 1 teaspoon ground turmeric (optional)
- 1 garlic clove, crushed
- 2 (14 ounce) cans mixed beans, drained
- 3 tablespoons mayonnaise
- 6 leaves basil, chopped
- Heat the olive oil in a non-frying pan and fry the breadcrumbs until golden and beginning to crisp.
- Remove and set aside.
- Fry the scallions in oil until soft and golden.
- Add the chopped pepper, chili, ground turmeric and garlic.
- Cook, stirring, for 5min.
- Add the beans, mayonnaise, two-thirds of the breadcrumbs and the basil.
- Season, mash roughly with a fork, then press mixture down to flatten.
- Sprinkle over remaining breadcrumbs.
- Fry the bean cake over a moderate heat for 4-5min until the base is golden.
