Maple Pork
- 3 tablespoons water
- 3 tablespoons brown sugar, packed
- 1 12 tablespoons pure maple syrup
- 2 teaspoons molasses
- 14 teaspoon ground ginger
- 18 teaspoon ground allspice
- 14 teaspoon black pepper
- 12 teaspoon dried thyme
- 1 bay leaf
- 1 lb lean pork, fat trimmed off (3 pieces of loin)
- salt
- Combine first 9 ingredients and mix thoroughly.
- Transfer to a ziploc bag, and marinate pork overnight.
- Drain pork, salt to taste, and barbecue until done (about 5-6 minutes per side).
- Serve.
