Harvest Pasta Sauce
- 1 whole Green Onion
- 8 ounces, weight Italian Sausage, Fully Cooked
- 1 whole Zucchini
- 1 whole Yellow Squash
- 4 whole Medium Tomatoes
- Slice the onion, sausage, zucchini, and squash to desired thickness.
- Dice the tomatoes.
- Spray a sauce pan with non-stick spray and heat over medium heat.
- Saute the sausage and onions for 3-5 minutes.
- Add the zucchini, tomato, and squash.
- Continue to heat over medium low heat for 5-10 minutes, covered.
- Serve over heated ravioli.
- Depending on your taste, you can add a small amount of tomato sauce or jarred pasta sauce to create a thicker sauce.
