Lean American Omelette

  1. Combine egg yolks, milk and salt; beat until thick and lemon colored.
  2. Add onions.
  3. Fold into stiffly beaten egg whites.
  4. Melt margarine in a 10-inch skillet over low heat.
  5. Pour egg mixture into skillet; cook over low heat for 10 to 12 minutes, or until underside is golden brown.
  6. Bake at 325u0b0 for 10 to 15 minutes, or until top is firm.
  7. Remove from oven.
  8. Make a deep crease across center of top.
  9. Place process cheese slices and meat on half of omelette.
  10. Slip spatula underneath; tip skillet to loosen and gently fold omelette in half.
  11. Top with additional process cheese slices.
  12. Serves 6 to 8.
