Meph's Key Lime Cheesecake

  1. Combine crust ingredients and stir well.
  2. Press crumb mixture evenly over bottom and up sides of a 9-inch springform pan.
  3. Bake at 350F for 5 to 6 minutes.
  4. Let cool.
  5. Beat cream cheese until light and fluffy; gradually add 3/4 cup sugar, beating well.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in lime rind, juice and vanilla.
  8. Pour mixture into prepared pan.
  9. Bake at 375F.
  10. for 45 minutes or until set.
  11. Combine sour cream and 3 tbsp.
  12. sugar; stir well and spread evenly over cheesecake.
  13. Bake at 500F.
  14. for 5 minutes.
  15. Let cool to room temperature on a wire rack; chill at least 8 hours.
  16. To serve, carefully remove sides of springform pan.
  17. If desired, garnish with lime slices.
