Easy Ice Cream Sandwiches

• 2 cups vanilla ice cream, slightly softened
• 1 cup chopped BAKER'S Semi-Sweet Chocolate, divided
• 30 chocolate chip cookies (2 inch)

1. Mix ice cream and 1/2 cup chocolate.
2. Freeze 20 to 30 min.
3. or until firm enough to hold its shape.
4. Spoon about 2 Tbsp.
5. ice cream mixture onto flat side of each of 15 cookies; cover each with second cookie, top-side up, to make sandwich.
6. Roll edges in remaining chocolate.
7. Freeze 1 to 2 hours or until firm.
