Lolani Rainy Day Clam Chowder
- 1 bottle dry Chardonnay
- 2 potatoes
- 1 large onion
- 1/3 lb. bacon
- 6 c. fish stock or 6 c. water with 2 bouillon cubes
- 1 tsp. pepper
- 2 tsp. thyme
- 2 (6 oz.) cans minced clams
- 1 can condensed milk or cream
- Pour a glass of wine.
- Wash and cube potatoes.tice onion. Drain clams and reserve juice.
- Rinse clams.
- Watch the rain spatter on the portholes - pour some more wine.
- In a 6 qt. pot, brown bacon - Remove and crumble.
- Drain grease and brown onion in pot.
- Separately heat fish stock or water and bouillon and reserved clam juice, then add to pot.
- Add potatoes, pepper and thyme. Simmer 1 hour, or until potatoes are cooked.
- Have another glass of wine.
- Check if the rain has stopped.
- Add clams and condensed milk.
- Simmer 10 - 15 more minutes or until clams are cooked. Serve with bread and wine - if there is any left!
