Lolani Rainy Day Clam Chowder

  1. Pour a glass of wine.
  2. Wash and cube potatoes.tice onion. Drain clams and reserve juice.
  3. Rinse clams.
  4. Watch the rain spatter on the portholes - pour some more wine.
  5. In a 6 qt. pot, brown bacon - Remove and crumble.
  6. Drain grease and brown onion in pot.
  7. Separately heat fish stock or water and bouillon and reserved clam juice, then add to pot.
  8. Add potatoes, pepper and thyme. Simmer 1 hour, or until potatoes are cooked.
  9. Have another glass of wine.
  10. Check if the rain has stopped.
  11. Add clams and condensed milk.
  12. Simmer 10 - 15 more minutes or until clams are cooked. Serve with bread and wine - if there is any left!
