Americana Key Lime Pie Recipe

  1. Thoroughly mix gelatin, 1/2 c. sugar, and salt in saucepan.
  2. Beat together egg yolks, lime juice, and water; stir into gelatin mix.
  3. Cook and stir over medium heat just until mix comes to boiling.
  4. Remove from heat; stir in grated peel.
  5. Add in food coloring sparingly to tint pale green.
  6. Chill, stirring occasionally, till the mix mounds slightly when dropped from a spoon.
  7. Beat egg whites until soft peaks form; gradually add in 1/2 c sugar, beating to stiff peaks.
  8. Fold gelatin mix into egg whites.
  9. Mix in whipped cream.
  10. Pile into cooled baked pastry shell.
  11. Refrigerateuntil hard.
  12. Spread with more whipped cream; edge with grated lime peel.
  13. Sprinkle minced pistachio nuts in center.
  14. Garnish with thinly sliced lime placed in whipped cream mounds around edge of pie.
